Seasonal Smoothie Anyone?

You may be a fan of adding berries, spinach and even oats to your smoothie, but what about pumpkin? Yes, pumpkin! And, since we’re in the season of “all things pumpkin,” what’s not to love about punching up the nutritious deliciousness of your smoothie by making this Pumpkin-Banana Smoothie? Make a batch to share, or just for you to store in the fridge for a few days. This recipe makes six servings. The Wellness Team here at AIPM hopes you enjoy it!

Ingredients:

  • 1 (15 ounce) can pumpkin puree
  • 1 (12 ounce) can evaporated fat-free or low-fat milk
  • 1 1⁄2 cups 100% orange juice
  • 1 medium banana
  • 2 Tbsp. brown sugar 
  • 2 dozen ice cubes 
  • 1-2 teaspoons ground cinnamon

Directions:

Chill pumpkin puree and evaporated milk in the fridge for 2 hours or overnight. Place all ingredients in a blender. Cover and blend until smooth. Pour over ice.
